The problems emerge at the legal level. Enter exemptions, thresholds, and variable rates and so on... A lot of things about VAT don't make sense at the first glance (what's the effective difference between 0% VAT and exemption?), but start to make sense once you get into details.

Still feels like a central entity (like Stripe) can do this better with software that automatically determines what the vendor and buyer amounts are and charge accordingly (and then remit that to the government).

Some already do, but they have to use a loophole which might not work for every type of product. Eg. For Gumroad and Amazon, they are selling your product (and charge VAT), but pay you *royalties*, which don't require VAT. So they completely deal with it on your behalf.

Stripe is not the merchant (they are the processor) so it wouldn’t make sense for them to do it Pretty much any company that collects payments on behalf of their customer does do this or some version of It’s been painful — but pretty critical to our value prop at
