Demand is definitely one of the metrics you want to use!
Products (with minimal demand) sell just as poorly when they raise their price as they did when their price was low.

I usually counsel SaaS businesses to grandfather existing accounts. Stripe makes this easy. But more importantly, you should aim to start high and go lower vs vice versa. Also: most businesses have addressed a smaller % of their markets than Netflix.
All that said, Netflix was more clearly able to define their demand curve. When they brought prices down, it was secure in the knowledge that they had overshot. Most entrepreneurs price too low without supporting data.
Two questions related to this: 1. When you say "demand" exactly what do you mean? 2. How do you measure demand?
