Coffee shop vs Restaurant economics:
- I spend at least $5 / day x 5 days a week ($100-$150 / month)
- I almost always go to the same place
- I go every day
- I spend ~$15 for lunch.
- Unlikely that I'll go to the same place more than twice a month ($30 / month)
Customer throughput (measured in "turns" per table) is much higher in coffee shops. Typical coffee shop will serve way more customers in a day than restaurant.

Umm...I agree, but not always and that ratio is not so different as you might think. A good restaurant has 2 turns of full capacity. Coffee shops decline after working hours (most of them anyway). The key is if people buy coffee to go (that's what makes Starbucks a cashcow).

Both are good businesses if operated correctly. However, assuming perfect execution in both cases. A restaurant is, by far, a more profitable business. Actually, you can't even compare them. A good restaurant (same capacity) can have 20X average customer ticket than coffee shop.
