I'd argue you are wrong on accepting less. The reality is, we have already locked in a future of adaptation. Energy isn't the only resource. Food, water, material etc will all constrict. Can we honestly depend on technology to solve all/most without cultural/societal shifts?
Nope. They are concerned that it will cause damage to the environment that will last thousands of years, and that profit-motivated corporations, corruptible governments, and fallible engineers can't be trusted to make it safe enough to make that risk tolerable.
You can disagree with the probabilities they assign, or disagree about the relative risks of nuclear vs the alternatives, but the core concerns is simply that we'll make a mistake.
