What are some events / experiences where you'd considering traveling (say) a few hours on a plane just to do that one thing?

Probably worth excluding most entertainment-related answers (fly to watch band X) or similar things (food?) for better, er, interestingness-density
If someone's really, genuinely willing to pay ~1k to fly to a city, get a hotel, arrange rides to-and-from airport, just to go to a restaurant, I'd like to know the name of that restaurant, and what's so awesome about it.

That's fair, someone being willing to set all that up is interesting. (Reading the original tweet, I didn't realise there was more to it than just spending a couple hours on a plane, which seemed a small cost to me.)

Good point: for people reading this far, I really do mean paying for all that, & going to all that trouble. And I really would (actually, in some cases have) go to that trouble for the things I named.

I think the Noma reopening qualifies, although most visitors do add a couple more meals and maybe some in between meals centred around the Noma booking. And sometimes there are significant social components to it too.
