(Not in amswer to your question, per se). I think my favorite, if somewhat unsatisfying, answer to “why category theory” is that “it makes trivial results in math trivially trivial”.
Amusing. Maybe a little bit like the way the idea of compactness made it easy to trivially extend lots of results about bounded subsets of R^n to hold more generally, including sometimes to some spaces you wouldn't expect?
