It's a safety feature that can be overridden, not a limitation of the physical possibility of doing it. But also, it doesn't matter because Star Wars lore isn't good or deep or interesting. It is a for-fun universe. It shouldn't be thought about too hard (see: Episode 8).

Eh I loved the old expanded universe because of their attention to detail on stuff like this

Agreed; having a consistent framework of the tech also allowed for different tactical and plot points. The idea or at least facade that the tech and universe worked according to rules helped the verisimilitude.

Yeah that's the argument against in-atmosphere jumps, it's that the ships wouldn't support its own integrity during the acceleration.
