I miss gas. I have an induction now and the control is nice but ... the is power system is shit. I would like to cook when the power is out.

That’s something I should think about. We have relatively frequent power outages over here. In the past we’ve been able to cook during a power outage. Not bake though.

Gas, while you can still get permits for it!

Gas line is already run right to the kitchen when the division was built, so getting a permit isn’t an issue.

Used induction for the first time in a cooking class in France a few years ago. I love gas, but if I were to build my own kitchen today, I'd absolutely choose induction. Fast heat/reduction, easy cleanup... lots of pros...

Same for me. I've got a gas range, but recently picked up a single burner induction cooktop to sear steaks (using cast iron skillet), and when we replace the cooktop we're going induction. Much better control.
