I was reading the label on my all-purpose flour -- AS YOU DO -- and discovered this is not actually all-purpose, it's some "ideal for biscuits" stuff with a protein content of 6.67%. I am kind of irritated but also happy, because I have 12% protein bread flour & can mix.
