... do the recipients know they're getting a canned response? Is it like "Okay, this is fine.'?
but how is that different than what you might ordinarily say to someone?

Unsure. I guess it feels less genuine when it's a canned response? But then again, if you get emails asking for the same response all the time, it does make sense.

Yeah so much of my email traffic just requires me to say "yes I have seen this thing you sent to me and will act on it when I can."
