To be fair, they’re bringing an entire raid online, M+ online, additional layers of Torghast, etc. It’s a lot more than a typical week, they probably just want to triple check that nothing makes it to live that’s broken
ya when they do that usually the maintenance is done before reset, like it was the last 4 raids

I’d say it’s safe to say they may be working under different time constraints having to run maintenance and deploy services with their engineers in many different workstations at home
