Can’t decide which of my dozen alts to play so I want to make a plain old human in WoW to try the Alliance side of BfA. Never played Priest so I want to try it but I’m also thinking Warrior just to keep this alt as basic as can be. Priest or Warrior?

Warrior is crazy fun at all points in my opinion, priest probably won't be before higher levels. I'd say go war unless you're not bothered by extreme lack of mobility while questing
