This is standard IEC battery nomenclature. The full name specifies the chemistry (C=Li-Ion), the shape (R=round), the size, and details specific to batteries that don't apply to individual cells. (A battery has multiple cells, a distinction that doesn't matter in common usage.)

You can get many cells in alkaline as well. I’m pretty sure. I’ve had some devices that came with stacked alkalines because cheap, but you could slip in a lithium primary instead.

If the voltage matches and the contact is made, in a pinch. But the designer might have made assumptions about internal resistance and capacity that depend on the specific cell characteristics.

Max current for these things also tends to be an issue. When I'm making small projects with these, I often leave out resistors and rely on the battery for current limiting.

Just like those people who designed old cameras to use mercury batteries, which were promptly banned. The only replacements are big zinc-airs, and I know from experience that those have poor shelf life and will drain very quickly if not used

The mercury ones had stable voltage, so they could serve as a cheap voltage reference. None of the replacements can do that.

That is why it is so annoying! Either have to use silly adaptors and hearing aid batteries or some super expensive variant just to get a meter working

The R refers to the "radial" inner design. It's the way the layers of the tires are arranged. For common cars the R-type is the standard.
