What are the best options for getting a cheap Mac (any kind) for simply producing Unity builds? Even 2 year old refurb Air's are like $850...

I ended up needing to get a nice Macbook for web dev freelancing stuff and just creeped on some refurb sites until I found a 2017 Pro on massive sale. Use it for everything now: Unity stuff, web dev, etc. and don't regret the investment at all.

University surplus sales. Every 4 years the UW universities get new Macs, so a couple years back I got my 2011 27" iMac for $100 which is their flat rate for all iMac computers. It's an annual sale but always in spring. My computer still runs unity great 8 years later.
