Thank you for your Japanese reply and additional information. Japanese eat raw fish, horse, chicken and fresh raw oyster, too. I didn't know that England had a food culture not to eat raw horse. I am little surprised at this because France and England are located in close places.

This is misinformation -- the chickens used for Torisashi are either French Poulet de Bresse or Canadian Blue Foot Chicken, both of which are certified to be salmonella-free, and are supposed to be cage-raised in environments free of harmful bacteria -- safe to consume on day-of.
