The Japanese take from everyone, copy and re-invent. I doubt anyone in Japan will be savage in criticism of this. Their curious about food re-invention and do enough weird mashups of their own not to be quite so prissy about it all.

This is true. Japanese culture is heavily influenced by others (China, Korea, the west). Most of things that we think of as Japanese are in fact, copied and modified versions of originals from elsewhere. In Japan, the term for learning 學ぶ comes from the term copying 眞似する。
