Also fun fact: most of what is considered American Chinese food is bastardized Cantonese style cooking, because most of the labourers who immigrated here came from the poorest regions of Guangdong (Same area as Hong Kong)

I think that a lot of people 'know' this in an intuitive sense - it's why a lot of places that serve this food are ran by people of that ethnic background - but it's forgotten once people start talking about 'genuine' or 'traditional' food. Very good to bring it to the foreground

A lot of people don't know or they make that they don't know, and that explains food snobbery takes that certain food is not authentic or something like that.
