You can really tell when an engineer grasps this concept and makes easy to use, intuitive APIs that are still flexible enough to get the job done. In fact I'd argue that the best APIs probably went through a "user research" stage where they tested it with devs to find its flaws

Completely agree! I have a “thing” for a well structured API. I think it is so important, even when the only consumers are other internal devs writing the client.
