Yeah, depends a lot on willingness of PI to be patient while you learn new things. I've been extremely fortunate to have two postdoc PIs who let me learn fmri analysis, deep learning, and 3D rendering, from a psychophysics-only PhD!

I found it depends a lot on the PI. Some encourage new learning whilst some only want a field expert. Also I found myself getting interviews despite not fitting essential criteria s my advice would be if job looks good - go for it! Regardless of experience :)

I'd reckon that PI's who appreciate a broader skill set will also see you as more than a work-horse, i.e. allow you to follow your own research interests a bit more.
