When I got to ~105 or so I just started using a guide to find the rest. Once you've broadly travelled the map it's not fun to just grind until you find the missing ones.

Certain shrines in the Gerudo region were a pain in the butt to find so I ended up using a guide...

Yeah, two or three of the ones I was missing were in that region. In general I didn't read the explanations, just looked up the location (or the first step location/trigger for the quests).
