In theory you could go back to around ~1992 and still make calls/SMS. You can't backdate the clock so I don't know. Not sure if iPhone can do 90s degraded resolution civilian GPS. Older SIM cards were a bit thicker and wouldn’t fit in the newer iPhone trays. Not sure if it’s something you could fix easily.

nanoSIM is thinner, but all the previous generations were the same thickness. You can usually just sand it if it's a problem.

I'd be concerned about the GPS Week number field in the GPS data stream. That rolled over since the 90s. Prob wouldn't change location fix, but GPS derived time would be (very) wrong.

I would assume a device with GSM gets the approximate date off the cellular network as a starting point for GPS search and a basis for interpreting the week number, no?

iOS supports USB Ethernet adapters via Apple’s “camera” connection kit, so wired internet access could theoretically work.

I'm sure it wouldn't support circuit-switched data. You might have trouble with a 5V SIM card, but I haven't tested that. Also, older SIM cards might be physically too big to cut down to nano size.

SIM cards were originally full size smartcards ("chip and pin" credit card format) but even then, and even with 8 contact form factors, you can usually cut right through part of the contact area without an issue. The actual IC is a small portion in the middle.
