There is simply too much stuff to memorize, and it changes regularly so why bother

I dunno. Sometimes actually knowing one thing deeply is highly valuable to an employer. I'm deeply suspicious of the "You must just be an expert learner, not an expert" mindset.

Being able to *learn* and *understand* something new is what matters. This is what makes the difference between a copy-and-paste coder and someone who looks things up the first time, but can internalize and understand the concept (and remember it if needed often).
