I never thought I had test anxiety until I did a code interview. I was 5x slower than normal FWIW.
Some anxiety is normal; as an interviewer you have to try to make the candidate feel at ease. It's not a speed contest.

This is also why I'd rather spend 45 minutes on a simple problem, ironing out bugs and perf. "Hard resets"/rapid-fire problems are worse.
