Can someone please explain what this means? How is it possible to use the words Big Sur and custom kernel together? I dont understand.
The OS now finally includes the firmware and bootloaders and tools necessary to replace Big Sur with not-Big-Sur. That was previously not possible.

You do realize Apple Silicon shipped with Big Sur, right? There is no other macOS version available on these machines.
