So here is an interesting copyright question to ponder: are we allowed to redistribute binaries of open source software that have been compiled and signed by Apple?

The copyright will apply to the source, and only the source. The binaries are the result of a process, that, furthermore, includes signing, by Apple. This is where the Apple agreement will be key to read.

But merely doing "something" to a copyrighted work does not automatically give you a copyright interest in that work. For that to happen you need to have created a derivative work, which requires creativity/originality.
