I am studying the Chinese language, and I don't understand that, and why it's a problem.
It's a problem because you can't write Chinese, or Japanese, or Korean in Unicode. You can only write an ambiguous set of characters that will only look like the language it's intended to be if it is displayed using the right font. Otherwise it will be wrong.

Do you think encoding a character composition input method like cangjie (but with unambiguous definition) would have been better? (Asking not because I think it's wrong, I barely know the lang, but in would this be better?)

I think just not unifying the glyphs would've been better...
