I've never been a big fan of Apple, except maybe during a brief time during their PowerPC period. But the M1 chip may be so attractive that, given that Linux will be available for it, I might finally be interested in owning Apple hardware for the first time in my life.

I fully agree with that, we should promote open technologies instead.
We should promote open technologies *in addition* :-) Everyone should have the right to use whatever hardware they want or choose to buy with whatever software they want. What you buy is your choice, and everyone has their motivations.
