Do you think it is feasible to get an open stack for Apple's GPUs? I think they might be relatively similar to PVR ones, which are hell due to super complex firmware and microcode. Driver and FW are usually co-programmed, and Apple could easily lock ucode/fw updates...

Time will tell, but I don't think it's impossible. Nvidia GPUs aren't exactly simple, and yet Nouveau exists. In the end it's people developing this stuff at Apple, and they have no interest in making their own jobs hard.

But it was possible to log the activities of the nvidia drivers for reverse engineering. If macOS is locked down, it might not be practical to do the same for M1 GPU?

macOS is not locked down. You can enable kext loading, and I fully intend to prod at the macOS drivers from every angle possible. One approach might even be to load pieces of the macOS userspace stack under Linux. There are many ways.
