Meanwhile, an upgraded 2015 Retina 27" iMac might become my main computing device (because a friend is getting rid of one), and if so, I've decided I'm sorting out the HDD temperature sensor nonsense, because apparently nobody has reversed that yet?

If you run the Mac without a HDD temperature sensor it will run the system fan at 100%. There's a free app you can download called ssdfan that puts the fan under software control based on the SMART temperature reading. Alternatively you can do this hack -https://youtu.be/QUDBNFK-SU8
