I used to do EFI boot from the arch usb live without doing anything funny, as well as booting from a EFI arch system installed on the SSD. I'm not sure, but I think the Mac EFI will just boot anything EFI compliant when osx isn't installed.
Does anyone know if a late 2015 iMac can do native EFI boot from a FAT32 ESP, or does it still need to be HFS+ and the EFI binary blessed?

Should be fine. On newer macs you’d have to disable the secureboot in the T2 chip
