XY mode is a bit of a fickle mistress, the best bet is an analog scope. Or, you know, that laser thing you mentioned.
It largely depends on the acquisition rate and duty cycle (what cameras would call frame rate and shutter angle). The larger the fraction of the incoming data that actually makes it to the screen the better it looks.

The funny thing about the laser is you've got the same problem; the laser is fine, but now it's the *camera* doing the sampling (since the laser beam is still just a single point). On an analog scope phosphor persistence helps a bit, though.

And then rolling shutter comes into play with consumer cameras. The laser is now moving forward and backward in time based on its vertical position.
