I'll swap the chip out of you if you want, but if you need those very specific ICs they don't look terribly easy to find.

From what I'm reading, the 032 is actually two 016 dies in a single package, so it could still be useful.

Yes, but emulating two dies just means running the same code twice. As long as you know where the second CE₁# pin hooks up, that's all you need to know. No reason to physically put it together.

Identically to the 016. It's not a different chip, it's two of the same chip. The two dies will show up somewhere separate in the address space (by virtue of separate CE lines, or maybe there's some bank switching / other way of switching between them).
