Lotion, sunscreen, and hand oils will do that to some materials. It may be a combination of solvent swelling and plasticizer/monomer leaching, I would ask @AGJchemist for actual real polymer chemist input.
Silicone might do better with not becoming super sticky...at least IME.
I don't really put anything on my hands, so it must be just skin oils. I've noticed a similar effect with the particular mouse model I use too, which is also rubber-coated (I own a bunch and the oldest ones have also gone gooey).
Maybe the fatty acids from your skin oils are polymerizing into sticky goo
