Their numbers are actually mediocre for a rubidium reference. You can buy something better on eBay for $200. It's a misconception that "atomic clocks" are expensive. Rubidium refs like these are in labs, cell towers, datacenters, etc. There are better technologies too of course.

But to actually use one to "properly" drive a DAC that I can only assume would have to be bespoke, and the engineering and Fab effort necessary for something so worthless...

The whole thing is nonsense anyway because for audio you only care about short-term jitter, not long-term stability or frequency accuracy. You could use the cheapest ceramic resonator and it would make no difference as long as your clocking circuit doesn't have too much jitter.
