I skimmed the entire thing and it kinda feels like besides 5am calls and some mild mess with contracts, there is nothing really wrong/lawsuit worthy, everything is industry standard.
If they really did try to reduce the holiday entitlement to 26 days including bank holidays, that seems like fair cause for complaint. Minimum entitlement is 28 days. But I didn't read in enough detail to figure out if they really did that.

I read the whole thing, and it does actually seem like they didn't give the proper amount of holiday time per UK law... but it's a three day difference and the guy should have figured out he was doing something "wrong" by the third time he got a call asking where he was

Right, in this situation you don't just keep not showing up on the days where they expect you to be working, even if they're in the wrong. You figure out who to talk to to get it resolved.
