The reason is that UK employment law protections make it difficult for companies to dictate what an employee can do once they stop being an employee. Hence you lengthen the notice period which gives the employer more control over what they employee can do.

Well, your salary needs to be paid out. Your bonus is normally kaput, maybe your deferred too (though by the time they are getting firing you, you probably weren't getting much of a bonus anyway)
