Often finish a bottle of sauternes over the course of a week. Longevity is one of the great things about it!

Need to do this more. A 750 is too much for one evening.

Despite the lower tertiary development I am cellaring Sauternes in 375s - though a full week breathing may not be the worst (it has the sugar to hold up for days...)
