These chips were an absolute dream. Layers of shattering crispiness on the outside, fluffy potato clouds on the inside. Sliced on the mandoline, roasted low and slow for 3 hours in olive oil, then compressed overnight and deep fried until golden.pic.twitter.com/RIgXAi8uuW

Freestyled it but I *think* it’s a Thomas Keller concept (or popularised by him?) Slice, mix with oil / fat of your choice, stack in a parchment lined baking tray (cover with foil / parchment to prevent browning), compress in the fridge (I used beer cans), fry 190°C till golden.
