Absolute Psychopath maneuver leaving it right on the oven grates. Came out amazing
Yeah I only realised I should have used a rack after it had already been in for ten minutes!

Honestly not quite sure what the rack would have achieved though — it had some ugly marks where it rested on the grate but they disappeared after it was seared. Any ideas?

For reverse sear I use a cookie sheet with the grate so there is air circulation and the fat doesn’t render directly onto the bottom of the stove. Massive pain to clean up after on very well marbled steak like that.pic.twitter.com/v9o46gWiwU
