Going to need to see your roast potato recipe too. I normally go with one I think is from Jamie Oliver — par boil and shake in a colander, and crush them with a potato masher halfway through roasting to increase surface area and maximise crispiness.

And if you’re lazy (i.e. me most of the time), you can skip the oil infusion and just thrown in the oil and herbs directly at the stage where you rough up the potatoes.
