I just finished watching all seven seasons and liked it, but I found a website that listed which episodes were plot driven and which were side quests, and just watched the plot ones (about 1/3 of eps)
Honestly all of the first two seasons are pretty bad though. It only starts getting good when Sisko shaves his head and gets a beard.
