You could do what I did to start, find a few reliably good $25 bottles (eg in Bordeaux I recommend Lanessan, in Burgundy P&M Jacqueson) and then mix in $50, $100, $200 bottles once a month or so as a treat.
Cephalopods can have a little deuxième cru Bordeaux, as a treat.
