Consumer microwave ovens use 2.45 GHz radiation, in theory a higher frequency would heat more evenly because smaller wavelength. Presumably there is a good reason not to do this but I have no idea what it is.

Microwaves leak a lot of their radiation into their surroundings. that's the official reserved band for microwave ovens- so anything else and you're treading on other devices' part of the spectrum

The heating is because of the dielectric constant of what’s being heated. Water is not resonant at that frequency, and a magnetron for power is broadband. It’s in that range though, which is why it fucks up bluetooth.
