For internships I would always choose a good team over an interesting product. What you do in your internships will not restrict what you do later, in fact it's probably good to get experience in multiple asset classes.
For first jobs same applies, but be aware if you work in one asset class for more than a few years you start to get pigeonholed and it can be harder to move. Ideally work with a great team for 2-3 years to learn, then you can try to move based on asset class preferences.
