      I have never made wine, but my understanding is that like Sauternes this was first made by accident and now has an insanely complex process to replicate that “accident” and if you mess up any of the steps you get rubbing alcohol

      Basically you need the exact weather conditions of cool, damp and humid followed by hot and dry in order to grow the fungus on the berries, and then you need to harvest and press them at the correct stage of fungal infection where they've lost some but not all water content.

      Apparently Yquem is picked in at least six separate passes through the vineyard (and up to fourteen) to pick grapes at the right level of fungal infection :/
