I know how all of the text books define gamma but that doesn't seem to jive with what others I've argued with think it is.

Gamma is simply the rate of change in delta given a $1 movement. So by definition gamma is much more pronounced in lower priced symbols. Maybe "gamma" describes a second thing but I've not found an alternate definition

Gamma is larger for lower priced names ($1 move more significant if the price is lower) but low px stocks don’t have such large $ moves so it balances out. More useful to look at cash gamma (ie gamma times square of the stock px) which is in the same units as option px
