Probably not a helpful tweet but... béchamel takes 20-25 mins to make, surely a good ragu takes longer? Can you make the béchamel while you’re cooking the ragu?
From a guy who loves béchamel and will make a batch just to pour it on top of cheese and tomato croissants so maybe don’t pay that much attention to me
