      Probably not a helpful tweet but... béchamel takes 20-25 mins to make, surely a good ragu takes longer? Can you make the béchamel while you’re cooking the ragu?

          lol no it's fine! my husband tried this when I was out of town and is kind of scarred for life about it but I guess I'm just resigned to using a recipe w ricotta and parm bc I *know* those are easy peasy
