I think it's also worth making the distinction that Stylization & Good Art Direction ≠ Having to look cartoony Halo 3 is still nice to look at, it actually has color
for sure. Portal 2 is hardly cartoony and still fucks, and its a 2011 game
It really does just come down to characterization and aesthetics than a fidelity to reality—more about believability and art than anything else. Hell, in real art, a lot of unrealistic styles are still heralded as equal to anything coming close to a photo.
A similar example that comes to mind is Mirror's Edge. The environmental aesthetics still look great and are pretty unique. The only thing truly showing its age are the character models which you rarely see or get a close look at anyway.
