I don’t have much shame about ignorance these days - but I have a high tolerance of ambiguity, and the hard part is the noticing.

Not sure if useful but I have a high tolerance for ambiguity (can read about half of ribbonfarm) and have a distracting level of background noticing, the way I seem to manage both is by categorising things as either precise explanation or fuzzy metaphors

It helps but it isn't perfect. I get pretty annoyed when people use fake precision and there's this weird substitution effect on eductional YouTube videos where I give a pass to fuzzy explanations but notice their 10 subtle editing choices made because of algorithm nudges

- formulaic camera shots that create a sense of ritual (e.g. knife slicing open the bag) and reduce need to come up with novel shots on a weekly production schedule - after food is taken out of the bag he always makes sure to overhype how amazing it smells since no smell-o-vision

- catchphrase "I know it doesn't look that good right now but watch this" before he sears the meat which he will say even when it does look good - using a blowtorch even after his experiments showed an electric heatgun works just as well + more practical

- putting limes to the cutting board that are never eaten or squeezed to add more visual appeal w/colour contrast - having one of the diners hold the camera and talking to the audience in such a way they feel like they are sat at the table

- doing a blind taste test where the predicted worst items are put first so they get progressively better and the grigarious latino guy doesn't accidentally do the maximum hype routine before he tastes the best one

It's a pretty good channel and the guy's empiricism despite his lack of intellectual identity stood out to me. He does what he needs to under the constraints of YouTube and making a living from kickbacks but I've learned a lot that I put to use in my own sous vide adventures
